Flavorful, without being overly spicy. This Red Curry will hit the spot and is so quick and easy to make! Goes great with rice, or riced cauliflower.
When I made this the pressure cooking part cooked for 12 minutes. Then you just sautee the veggies for about 5 minutes.
Lid on at 4:38pm
Pressure at 4:45pm
Lid off at 4:50pm
**RECIPE**
3 T red curry paste
1 14oz can of Coconut milk
1 lb boneless/skinless chicken breast, or thighs, sliced thinly
1/4 C chicken broth
2 T fish sauce- more to taste
2 tsp brown sugar
1 T lime juice
1 C red pepper, cubed (or green pepper)
1 C sliced carrots- I like the pre-sliced at the store
1/2 C onion, chopped
1/2 C bamboo shoots
The following two ingredients can probably be found at an Asian grocer. However, if you don’t have one handy, you can substitute
4 lime leaves= lime zest of 2 limes
12 Thai basil leaves= McCormick makes a dried Thai Basil in the spice section of my grocery store
Set your pot to sautee, once it says ‘hot’ add half a can of coconut milk and your curry paste. Mix well.
Turn off sautee, add chicken, the rest of the milk, and the chicken broth. Lock your lid into place and set it to Pressure Cook for 4 minutes.
When time is up, do a quick pressure release.
Stir in the rest of your ingredients- spices, veggies, brown sugar, fish sauce. Set your pot to sautee, I did a low sautee.
Cook until the veggies are tender, but still crisp. Serve over rice, or riced cauliflower.
*If your sauce is a bit thin, you can thicken it up with a tablespoon of corn starch/water and stir it into the sauce. Works great!
Shank is an economy cut of beef with lots of tendon, which adds richness & body to stews when slow cooked, despite being surprisingly low fat and high protein!
This is a pressure cooker recipe. If cooking stove top, these should take 90 minutes for a soft-with-a-chew texture and 2 hrs for a fall-apart tender texture.
So flavorful. So easy. Simple ingredients. Possibly one of the healthiest of one pot chicken & rice you can feed the family :)!
Ingredients:
FOR THE CHICKEN
4-5 chicken thighs de-boned
1 tbsp. salt
1/2 tsp black pepper
1 tsp sesame oil
1 tsp sugar
FOR THE RICE
3 tbsp. oil
4 cloves garlic minced
1 shallot minced
4 cups rice
1 t salt
4 cups water
2 cloves garlic smashed
2 scallion stalks
1″ ginger sliced
FOR THE SAUCE
1 TBSP Sriracha chilli sauce
1 tsp sugar
1 TBSP chicken broth or water
-Mix everything together and adjust to taste.
Directions:
-Marinate the chicken with salt, sesame oil, pepper and sugar and set aside.
-Wash and drain the rice.
-Mince the garlic, shallot, slice the ginger, knot the scallion stalks.
-Select “SAUTE” on the instant pot and wait until it displays “HOT”.
-Add the oil and saute the garlic and ginger until lightly browned and fragrant.
-Add the rice and stir until mixed.
-Add salt and water
-Place the garlic, scallion knots, chicken and ginger over the rice.
-Close the lid and turn the valve to “SEAL”.
-Select “CANCEL”, then “MANUAL” and adjust the time to 6 minutes.
-Prepare your chilli dipping sauce by mixing everything together.

-After letting the Instant Pot come to a nautral release of pressure (NPL), the pin on the lid will come down. Carefully open the lid and set the chicken aside and fluff the rice.
-Plate everything and bone enjoy!
NOTE:
Use the chicken bones to make the side chicken soup broth!

Remember going to the mall back in the 90s to visit such gems as Hot Topic, Claire’s, Sam Goody and Chess King? Surely you needed a break from such high fashion and you’d treat yourself to a nice trip to the mall food court t gossip about the latest eppy of 90210!
Back before food courts went all chic and frou-frou with burgers made of golden grass-fed beef and lavender-infused tarot fries. This is the 90s and Bourbon Chicken is being hawked EVERYWHERE! Literally, every place was offering a free sample of the stuff – I swear even the taco shack tried getting in on it. And can you blame them? This stuff was seriously addicting. Like you’d put your shame game to rest knowing you’d get as many free samples of Bourbon Chicken (from each place that offered it) as possible and – BOOM – free lunch!
Sadly, it’s not common to see such a wonderful free display of this food anymore (go to Costco for that instead). And Bourbon Chicken has taken back seat to unicorn-dusted tofu. But that is changing now. Yup – I’m bringing the 90s back. And you’ll NEVER have to scavenger for another free sample again because you’re easily making this in your Instant Pot in no time at all. In fact, I guarantee it’ll be just as wonderfully sweet & savory as you remember!
So get out the scrunchies, pierce your upper ear cartilage, buy some chokers, a witchy-goth outfit you’ll wear once and break out the Ace of Base – because BOURBON CHICKEN RETURNS!
