Remember going to the mall back in the 90s to visit such gems as Hot Topic, Claire’s, Sam Goody and Chess King? Surely you needed a break from such high fashion and you’d treat yourself to a nice trip to the mall food court t gossip about the latest eppy of 90210!

Back before food courts went all chic and frou-frou with burgers made of golden grass-fed beef and lavender-infused tarot fries. This is the 90s and Bourbon Chicken is being hawked EVERYWHERE! Literally, every place was offering a free sample of the stuff – I swear even the taco shack tried getting in on it. And can you blame them? This stuff was seriously addicting. Like you’d put your shame game to rest knowing you’d get as many free samples of Bourbon Chicken (from each place that offered it) as possible and – BOOM – free lunch!

Sadly, it’s not common to see such a wonderful free display of this food anymore (go to Costco for that instead). And Bourbon Chicken has taken back seat to unicorn-dusted tofu. But that is changing now. Yup – I’m bringing the 90s back. And you’ll NEVER have to scavenger for another free sample again because you’re easily making this in your Instant Pot in no time at all. In fact, I guarantee it’ll be just as wonderfully sweet & savory as you remember!

So get out the scrunchies, pierce your upper ear cartilage, buy some chokers, a witchy-goth outfit you’ll wear once and break out the Ace of Base – because BOURBON CHICKEN RETURNS!

    This was the first thing that wasn't rice that I tried to make in my Instant Pot… A glorious success, short of I think choosing the wrong bourbon… Do you have a preferred brand to use for this recipe?

    I had all the ingredients in my kitchen. My hoisin sauce was garlic flavored and I used rice vinegar. This recipe is 10x better then any mall I've ever been to ,and my family LOVED it. Thx for sharing. I'm subscribing to your channel right now.

    I think theirs is too sweet (the mall) yes I also rather user use breast. I also like veggies with it carrots and broccoli. Use Kikoman to give Bourbon flavor if you don't want to use bourbon.

    This is our favorite recipe of yours. It is easy to make and tastes delicious! Another nice thing is how flexible the recipe is. We don't have bourbon so we use Canadian whiskey. We like to use BBQ sauce in lieu of catchup and honey. Man, it is good!

    This recipe is so dang good. Getting my 10 year old to eat anything different is a challenge, and he had to admit this was better than mall food! None of your recipes have failed me yet. Congrats on all the success! Go Hoosiers!

    I don’t get this at the mall anymore bc the chicken is always fatty to me. I want to try this with breast meat but don’t know what kind of bourbon to get? Can someone show me a picture of it? Thank you.

    Ok. Did this recipe again but was too lazy to cut up the thighs. Roasted them (with salt and pepper only) for 15m in a 400F oven and then just tossed everything into Instant Pot with your list of spices and cooked it for 10m. Removed them and then thickened the sauce per your method. Was awesome! Served it over farro.

    Not toothpick mall food but it was a huge hit. Not one of the 16 thighs remained. I used an 8qt pot if you’re curious.

    Just made this today, following your instructions step-by-step. It was absolutely delicious. I couldn't find the Gravy Master anywhere locally, so I substituted the same amount of Worcestershire Sauce. Came out great! Thank you for this recipe! It was incredibly simple, quick and easy to make.
