    You want to toast the rice a little before adding the tomatoes and add the broth in last. Adds a veeeery nice flavor.

    This is just a suggestion because we substituted something for the cheesy beans and rice casserole, ( jalapeños ), because for whatever reason I cannot eat bell peppers (of all things—but at least it wasn’t garlic or onion 🥲). It’s specifically bell peppers. I can have poblano, hatch, and anything that’s hot up to Thai hot.
    Anyway we substituted jalapeños for the red bell pepper, and IT WAS SO AMAZING.
    When you use bell peppers in recipes, you should have as an option to use equal parts of jalapeños because some people might be wanting it hotter and just need a suggestion rather than give your recipe a poor rating. Maybe they just need the reminder that there’s no actual rules in cooking and if there’s a vegetable or pepper they know that they’d love better in your recipes it’s okay to use. It’s okay to think on your feet and substitute or add something when you have gut feelings. It’s your kitchen. To me, a jalapeño is not that hot. Most of the large ones are very mild. Some really do like it hot. And it wasn’t even as hot as I thought it was going to be. It was just so flavorful.
    We used fresh jalapeños in the same quantity as what was called for in bell peppers and it was the best recipe we’ve ever made of yours. I highly encourage you to try fresh jalapeños in your recipes in place of bell peppers. The larger ones aren’t very hot but have a wonderful robust flavor profile all on their own. It’s up to you how many seeds you add in. I think we added 2 whole jalapeños chopped up and 4 de-seeded and chopped for the whole casserole recipe. It was just the perfect amount of heat for our family. It was so perfect. We will be making it again. Idk if a single recipe will be enough, we may have to double it up 😆🤤
    Also, we renamed ours Dirty Rice because we were positive it turned out nothing like the original but in an awesome way. Our mouths water at the thought alone LOL. Red bell pepper and jalapeños, are both peppers, but you can’t really compare them, can you? They’re just on different playing fields. Same sport, different league, different player different game. I don’t go past Serrano peppers, though.
    Fresh jalapeños are so tasty minced inside recipes, too. Maybe a Tex Mex tofu scramble burrito with breakfast potatoes inside. That sort of thing. Yum. It’s really not as hot as you’d expect. Frank’s Red Hot is actually something I use on my salads (not TOO much lol), so if you can tolerate that, you can tolerate my suggestions. Frank’s is 450 SHU.
    They’re also sometimes nice chopped up or sliced fresh in salads. Pickled jalapeños I can only tolerate on some garbage nachos, but it’s fresh for me every other time lol.
    Just wear gloves when chopping if you have sensitive skin to capsaicin. It definitely doesn’t burn as much in your mouth, though 😅😭
    It’s just a huge Fiesta. What I would have loved would have been for it to have been topped with some vegan Forager sour cream. Next time. MM!
    Anyway just please make the suggestion to think on your feet according to your own personal favorite flavors.
    And even then, jalapeños barely make a dish Mexican.
    It doesn’t hurt to also have fresh avocados/guacamole, diced or minced white onion, and fresh cilantro for toppings for a more authentic flavor. Chopped chives are pretty universal, too, and definitely pretty as a food garnish on top of many foods. Not sure how Mexican those are but they’re too useful not to consider topping food with 😂
    Lime juice pairs so well with the minced white onion and cilantro btw. Just yum. But idk if you’re a cilantro fan 😅
    As a child I tasted soap, but now it’s amazing. So I can forgive people who still don’t like it LOL.
    I guess “soapy” tasting food just isn’t for everybody. 🤣
    To me, those 3 flavors together just scream and shout Mexican food. 🎊🎉🇲🇽🇺🇸🎉🎊😂
    It’s not uncommon for us to incorporate 2 or 3 other ideas (ours or someone else’s) into our recipes if it sounds tasty lol.

    I am a new diagnosed type2 diabetic. I think this recipe will be a great one to add to my diabetic diet. I will probably substitute the brown rice with barley. And keep the wild rice in recipe. Bump up the whole grain to help not possible spike my blood sugar as much. Thank you so much for your wonderful creative recipes. Love you channel. Been subscriber for a while now. Love Tamson 😇 💗

    my receipe is
    in a blender put 2 tomatoes 1/4 of onion, 1 garlic, and 1 cup of broth ( you can use water and add a spoon or a cube of vegetable broth) blend it.

    in a pan 1 spoon of oil or you can skip the oil if is non stick, 1 cup of rice and fried it until turns golden.
    pour the blended mixture and let it boil once is boiling pour the second cup of broth and taste it for salt get it to boil and lower the heat to low in 15 min ll be ready,
    OPTIONAL:
    you can add vegetables like corn, cubes of carrots, sweetpeas, green beans etc.. there are some mixed bags in the frozen area of the stores. add them when id boiling and cover it with the lid let it cook in low heat.

    This is also an easy stovetop recipe.
    1 large onion, diced
    2 c vegetable broth, low sodium
    1 c wild rice mix (or brown rice)
    1 t oregano
    1 t cumin
    1 t regular paprika
    2 T tomato paste
    1 c tomatoes, chopped
    1 T canned chopped green chilis
    1 T tamari, soy sauce or liquid aminos (optional)
    Squeeze of lime juice to serve
