You want to toast the rice a little before adding the tomatoes and add the broth in last. Adds a veeeery nice flavor.
-otherwise thanks for proportions in the pressure cooker
That does look super delicious!
Would love to see some more Instant Pot recipes in the future!
Made this to use with black beans and veg in a burrito. Really good. Still a little hungry so I had a small bowl of just this. I loved it. Comfort food!
Thank you so much for this and all your recipes.
This isn't mexican rice………………………………………………………….
Please explain why you don't add salt instead of tamari, soy sauce, or liquid aminos. I'm sure there is a reason. Thanks! Love your channel and recipes!!
This is just a suggestion because we substituted something for the cheesy beans and rice casserole, ( jalapeƱos ), because for whatever reason I cannot eat bell peppers (of all thingsābut at least it wasnāt garlic or onion š„²). Itās specifically bell peppers. I can have poblano, hatch, and anything thatās hot up to Thai hot.
Anyway we substituted jalapeƱos for the red bell pepper, and IT WAS SO AMAZING.
When you use bell peppers in recipes, you should have as an option to use equal parts of jalapeƱos because some people might be wanting it hotter and just need a suggestion rather than give your recipe a poor rating. Maybe they just need the reminder that thereās no actual rules in cooking and if thereās a vegetable or pepper they know that theyād love better in your recipes itās okay to use. Itās okay to think on your feet and substitute or add something when you have gut feelings. Itās your kitchen. To me, a jalapeƱo is not that hot. Most of the large ones are very mild. Some really do like it hot. And it wasnāt even as hot as I thought it was going to be. It was just so flavorful.
We used fresh jalapeƱos in the same quantity as what was called for in bell peppers and it was the best recipe weāve ever made of yours. I highly encourage you to try fresh jalapeƱos in your recipes in place of bell peppers. The larger ones arenāt very hot but have a wonderful robust flavor profile all on their own. Itās up to you how many seeds you add in. I think we added 2 whole jalapeƱos chopped up and 4 de-seeded and chopped for the whole casserole recipe. It was just the perfect amount of heat for our family. It was so perfect. We will be making it again. Idk if a single recipe will be enough, we may have to double it up šš¤¤
Also, we renamed ours Dirty Rice because we were positive it turned out nothing like the original but in an awesome way. Our mouths water at the thought alone LOL. Red bell pepper and jalapeƱos, are both peppers, but you canāt really compare them, can you? Theyāre just on different playing fields. Same sport, different league, different player different game. I donāt go past Serrano peppers, though.
Fresh jalapeƱos are so tasty minced inside recipes, too. Maybe a Tex Mex tofu scramble burrito with breakfast potatoes inside. That sort of thing. Yum. Itās really not as hot as youād expect. Frankās Red Hot is actually something I use on my salads (not TOO much lol), so if you can tolerate that, you can tolerate my suggestions. Frankās is 450 SHU.
Theyāre also sometimes nice chopped up or sliced fresh in salads. Pickled jalapeƱos I can only tolerate on some garbage nachos, but itās fresh for me every other time lol.
Just wear gloves when chopping if you have sensitive skin to capsaicin. It definitely doesnāt burn as much in your mouth, though š š
Itās just a huge Fiesta. What I would have loved would have been for it to have been topped with some vegan Forager sour cream. Next time. MM!
Anyway just please make the suggestion to think on your feet according to your own personal favorite flavors.
And even then, jalapeƱos barely make a dish Mexican.
It doesnāt hurt to also have fresh avocados/guacamole, diced or minced white onion, and fresh cilantro for toppings for a more authentic flavor. Chopped chives are pretty universal, too, and definitely pretty as a food garnish on top of many foods. Not sure how Mexican those are but theyāre too useful not to consider topping food with š
Lime juice pairs so well with the minced white onion and cilantro btw. Just yum. But idk if youāre a cilantro fan š
As a child I tasted soap, but now itās amazing. So I can forgive people who still donāt like it LOL.
I guess āsoapyā tasting food just isnāt for everybody. š¤£
To me, those 3 flavors together just scream and shout Mexican food. ššš²š½šŗšøššš
Itās not uncommon for us to incorporate 2 or 3 other ideas (ours or someone elseās) into our recipes if it sounds tasty lol.
Another great recipe, thank you so much š
I am a new diagnosed type2 diabetic. I think this recipe will be a great one to add to my diabetic diet. I will probably substitute the brown rice with barley. And keep the wild rice in recipe. Bump up the whole grain to help not possible spike my blood sugar as much. Thank you so much for your wonderful creative recipes. Love you channel. Been subscriber for a while now. Love Tamson š š
Looks delicious!
Just needs some black beans on top! Yum indeed! š
I despise the part when you ask for money in all your videos.
Can things get any easier!!
it looks delicious. from what part of Mexico is that?
my receipe is
in a blender put 2 tomatoes 1/4 of onion, 1 garlic, and 1 cup of broth ( you can use water and add a spoon or a cube of vegetable broth) blend it.
in a pan 1 spoon of oil or you can skip the oil if is non stick, 1 cup of rice and fried it until turns golden.
pour the blended mixture and let it boil once is boiling pour the second cup of broth and taste it for salt get it to boil and lower the heat to low in 15 min ll be ready,
OPTIONAL:
you can add vegetables like corn, cubes of carrots, sweetpeas, green beans etc.. there are some mixed bags in the frozen area of the stores. add them when id boiling and cover it with the lid let it cook in low heat.
add some pinto beans to make it authentic
This is also an easy stovetop recipe.
1 large onion, diced
2 c vegetable broth, low sodium
1 c wild rice mix (or brown rice)
1 t oregano
1 t cumin
1 t regular paprika
2 T tomato paste
1 c tomatoes, chopped
1 T canned chopped green chilis
1 T tamari, soy sauce or liquid aminos (optional)
Squeeze of lime juice to serve
Appreciate your effort but as a vegan Mexican, I can tell you this is not Mexican rice. Looks delicious thought š…
I'm craving that kind of rice lately….and now you got a oil free recipe for us š
I don't have an Instant Pot. Can this be done in a regular pot at a slightly longer time frame?
OMG I was just thinking about this, Thanks Jill!!!
