I was so excited to try this recipe and (now that Iβve done it), Iβm equally excited to taste the cake! My only worry is the sweetness of the frosting. I live in Canada and normally use a digital scale to weigh/measure my ingredients. I donβt measure ingredients in cups anymore. Therefore, I probably added way too much powdered Swerve because when I licked the frosting spatula, it was so sweet that it was bitter.

I make Keto peanut butter cookies without using baking powder because you can taste the powder. So, what I want to do is use the cookies as a base and however many layers I want. Im very keen to use the part of the recipe for the filling.

How important is the coconut in the batter? I don't like the consistency of coconut, but otherwise the cake looks delicious.
