Winner, winner, chicken noodles. This may be my all-time favorite I’ve watched. Thanks! My granddaughter was diagnosed years ago with celiac disease, then a few years later they determined she didn’t have it after all, and only recently they’ve gone back to the original diagnosis 🙁. She’s so unhappy about it, but I’m going to sneak these noodles into her diet and make her really happy, because she’s a noodle fiend!

cassava starch is very high in carbs. maybe i can substitute that with almond or coconut flour to make it keto friendly. great recipe tho!

I'm so excited–I've made these before!! I rolled mine into gnocchetti because I don't have the patience for rolling long noodles.
This is a good option for ppl who have trouble consuming "whole meats" and require their meat pre-processed due to digestion issues. Because the chicken is blended into a paste and boiled, it's much easier on the stomach, and could benefit elderly ppl with digestive issues and those of us with Gastroparesis and other motility disorders making meat digestion an issue.
Do you think this would work well with cornstarch rather than tapioca?

I do a keto diet for Epilepsy. This would be wonderful as I'm tired of shirataki noodles. For me I'd leave out cornstarch.
