Would you sub fenugreek powder for the leaves or just leave out all together then?
Edit: I ended up sprinking a little fenugreek powder because I wasn't sure lol It was so delicious! This tastes restaurant quality! I didn't have those 2 funky spices to add unfortunately, but even without them, the dish was phenomenal.
This was delightful. Watching you cook was informative, because my taste and smell don't work, so seeing your timing on it all was great. Loved the idea to bake the veggies first. And so glad your folks appreciate you and your offerings!

We tend to use mustard oil for all dry indian subzis. Tastes really good.
