Scary enough, I cook like you…I just wing it mostly. Whatever I have, it's going in. Never made two chilies the same. Loving these vids! I've been hoping for ages that we can see more cooking shows, less competition. Food Network needs to get back to roots!

Chef I am really loving this series. Bless you for doing this. I truly appreciate your technique rather than recipe approach. There are so many people these days that truly have no idea how to cook without a recipe

Tomatillos are wonderful! Try roasting them first. Then, when it's almost done, add a couple spoons of masa harina and give it a few.
A friend who travels the world and likes many cuisines says if chili were served in a 5-star restaurant, it would be mine. Such an honor. I'm merely a better-than-average home cook. I learned at the school of mama. ☺️

Looks d'lish I think I like the chunk meat better than ground, which seems to get lost in the pot. Lol😁
I also think think that tx has the right idea no beans. Which I'm not a big fan of. I only like 2 kinds lentil soup and bean with bacon soup
