    I've just made it. 30 to 35 minutes in the oven is not enough. Test it with to toothpick and even like that, the cake shouldn't be wobbly because of the apple and pineapple, so, once firme, then is cooked. Anyway, it's delicious. I didn't use raisings and instead of icing, I used mascarpone cheese with lemon juice and a bit of sugar.

    Looks good & I really love your ‘the most amazing…’ recipes, but I just can’t get behind apple sauce & pineapple. I know it adds moisture, I get the science behind it, but I just can’t bring myself to add it.
