    Vietnamese Instant Kimchi Recipe

    o Time: active: 15 mins; inactive: 15-20 mins

    o Serving: 6

    Ingredients:

    • Water + 1 TBS (18g) Kosher salt – for blanching

    • 2-3 red Fresno pepper (see **NOTE!!)

    • 1-3 hot Thai chili pepper, optional for extra heat (see **NOTE!!)

    • 1 ½ inch (15g) piece of ginger

    • 3 cloves garlic

    • 4 TBS (60g) ground chili Sambal Oelek https://amzn.to/3QKeNQ1

    • 4 TBS (60 mL) rice vinegar

    • 2 ½ TBS (38 mL) fish sauce, more to taste if needed

    • 1 tsp (6g) salt

    • 1TBP (12g) sugar

    • 1 large Napa cabbage

    Instruction:

    1. Bring a large pot to a boil; add 1 TBS salt

    2. Cut green onion into 2-inch (5 cm) sticks; add to a small mixing bowl

    3. Chop then mince bell pepper; add to the bowl

    4. Mince ginger and garlic; add to the bowl as well

    5. Add tomato paste, chili paste, vinegar, fish sauce, salt, and sugar; mix and set aside

    6. Cut the cabbage into 2-inch (5cm) pieces

    7. Drop the hard end part of the cabbage to the boiling pot; cook for 15-20 seconds

    8. Add the rest of the cabbage (harder parts go in first), stir then drain off immediately; rinse with cold tap water 2 times

    9. Add the cabbage to a large mixing bowl; pour the seasoning mixture over; mix thoroughly

    10. Let rest in refrigerator for at least 15 minutes before serving

    **NOTE!!

    • You may substitute fresno pepper with 2-3 jalapeno pepper + ½ minced red sweet bell pepper

    • For extra heat but no Thai chili pepper, you may use hot red pepper flakes instead

    • Everyone’s taste is different so make not of first time you make this to adjust seasoning to your liking the next time you make again.
