    Love your new recipe for quinoa cake. Something I put in to your cakes that tends to puff it up more is a tablespoon of apple cider vinegar. I found it reacts with the baking powder or baking soda to create gases to leaven the cake.

    Ami – I have been a aficionado of many of these WFPB SOS YouTube channels for several years, but you have taken it to a new level. I have a 4 ft shelf full of the cookbooks but I'm using your recipes time and time again these days. You are tireless and so so creative and I (judging from your increasing subscriber numbers and comments) and your devotees are so grateful for all the effort you are putting into this channel. BUT PLEASE BE KIND TO YOURSELF. Diets have to be approached gradually and creative outlets do as well. Enjoying you and your family and your approach to food. I particularly channel you when I'm ordering my farm box. Thank you for all you do. Don't forget to give yourself a break – for rebounding, for reading, for doing nothing.

    I make pumpkin spiced pancakes once a week 🫠. I know you don’t entertain choc chips (smart woman!) but I don’t add any sweetener to them bc the choc chips are in there. I do tablespoon of mini chips with a cup of oats, 1 cup water, .5 cup of pumpkin, tbsp of flax, tsp of baking powder, and 2 tsp of pumpkin spice. 😋😋 it’s a lot like your cake concept, but I make the batter into pancakes instead and it’s such low cal density w pumpkin even more than banana 😎 Can’t wait to see all the pumpkin things you invent!
