    I’m old, so know that the word catsup is from the original Chinese sauce called kê-tsiap. So catsup is the original anglicization. Ketchup came later, and is more phonically correct given how the word came to be pronounced. In other countries you can get things like mushroom or fish catsup still. In the states it’s just made from rotten tomatoes (literally.)
