I absolutely love Mexican rice and I have tried many different ways to make it. I find that using salsa and chicken bouillon powder and water is the easiest way to make Mexican rice.

My kids have recently discovered how much they love eating refried beans mixed with Mexican &/or Spanish rice. I have always mixed mine together and they use to say it was nasty. But they are adults now and we made some Spanish rice and refried beans recently as side dishes and they tried it together finally and LOVED it lol! Now my 25 y.o. daughter wants to eat it all the time and makes sure we gave all the stuff to make it on hand! I want to try this recipe of yours! I know this will only take our mixture up several notches! Thank you so much for sharing your dad's recipe! My dad is no longer with us now either and had a love for cooking. I don't have any of his recipes written down. He kept all his in his memory. He only wrote down his poems. I wish I had his recipes tho.

Angelica I like to use the can of chicken broth as you showed and for the tomato component, use tomato paste. Doesn't take a lot to get a rich tomato flavor. I keep a tube of it in the fridge so it's always at hand and you can use just what you need for the rice. But I have to say, it's really hard to beat your chipotle adobo version of Mexican rice. That stuff is SO good! I made Carne Guisada and that chipotle adobo rice several times this past winter.
I'm a weirdo that can't eat anything related to poultry, so no chicken anything. Including eggs. So I have to use either beef or veg bouillon or broths. My son buys the Better Than Beef, and Better Than Vegetable Bouillion in the jars. And I'll use the tomato paste diluted in the broth I'll make (I dilute the bouillion in hot water so I'll add the tomato paste in that) then add a tiny bit of molasses. I find that the molasses adds a touch of sweetness that the loss of the chicken takes away, but its bitterness (with the tomato paste's) balances. And it adds color as well. 2 wins! 😋 I don't like adding fresh tomatoes, especially during the winter or spring, because they're tasteless. And canned ones are either expensive or can be hit or miss. So paste is a good way to add some tomato flavor, imho.
