For finishing the stock: most electronic cookers have a sauté mode. You could just remove the lid, add the dried scallops, and cook on (Low) sauté. No need to transfer pots or anything.

Hey Jon, you mentioned you had family in Guyana. If you haven't, you need to try two kinds of guyanese thyme.( marryman's thyme and i think the other is flat leaf I can't remember. Then you want to try casareep, it's a thick syrup( um sauce?) that taste like chinese black vinegar( used for pepperpot or brown stew). Try ruri ruri pepper.(sweet heat). I hope you see it.

Instead of stopping the pressure cooker to add an ingredient…. Why not cook the dried scallops separately and add at the end when you decant (does decant work in this context? 🤔) it from the pressure cooker? It might not be exactly like the original…. but it might be closer to the original recipe.
