    this technique of 'pre-roasting' veg with spices in the oven before you add it to curries or chilies or stews is so perfect and really amps up the flavours! I made my sweet potato chili this way and it was so perfect!!! will try this one in the next week ๐Ÿ™‚

    I just made the Curry but it did not turn out like yours. The sweet potatoes turned a little black after 25 Minuten in the oven although I roasted them even at 200 degrees only. Do you have any idea what I could do different the next time?

    looks yummi can I stew the squash and sweet potatoe and paprika in a pan after roasting spices in some water if I do not want to roast it extra in the oven? I am used to make curries in one pot (like have a simlier way, althoug I know that pre roast in owen will make extra consistency and flavour)
