I need your help with a question I have about freezing meats and I make these delicious Keto Steak Bites with a yummy sauce to dip them in. These are so good.

    You coulda made stock outta that meat. As long as you hit 165 daygrees its good. I always put the meat package in a zip loc freezer bag so it is double protected from freezer stink.

    I can't wait to try the horseradish and mayo! I had a delicious roast beef sandwich in Colorado a good twenty years ago that had a sour cream horseradish sauce that was to die for! But when I tried to make it at home it separated and curdled and was truly nasty. I don't know what they did to make theirs work, but I think the mayo and horseradish will be as good.

    If you repackage your meat when you get home and you vacu-seal it to remove all air from the package, you will not get freezer burn and it extends 3-5 times the meat's lifespan in the freezer. If you have freezer burnt meat and you pressure cook it, it removes the "off" taste. Freezer burnt is not dangerous to consume, it's just that the taste is off and unpleasant. I had some chicken breasts that were burnt so I decided to pressure cook them for the cats. I tasted it, tasted perfectly fine, no off taste. As for ground meat, I don't buy much but when I do, it's always in those chubs that have no air in the packaging (or family-sized packages that I vacuseal in 1lb bags). Haven't lost any to freezer burning yet and I keep it approx. 6-9mths max (cause I use it up, not cause I toss it).

    I literally have steak bits marinating in my fridge now and I used some Greek seasonings too! I would say tossing uncooked meat after a year in the freezer but I heard grounds meats a little less than 1/2 the time.
