    Mindy, wonderful meal ideas…you rock. To change up your beef stew recipe, you could add curry powder & frozen peas. I make a similar meal here in Australia & we call it savoury mince (we call ground beef mince over here) I add beef stock & gravox (a gravy concentrate that’s available here), serve over rice or mashed potatoes & it’s comfort food in a bowl.

    I ended up getting a new Aura for free! My SIL is a matienence man at an apt complex, someone moved out and left a bunch of stuff the aura being one thing. It was still in box and I dont think ever used. We cleaned it up just incase and I am loving playing with it! The saute option is my fav feature!

    Mindy, I started watching your channel as a curious person who is learning her way to a good relationship with food, combined with how to really make tasty nutritious food on a reasonable budget. Even though I’m from Europe, I find your videos incredibly inspiring and useful – it’s the way of thinking you are handing over to us, never mind we have different shops and brands.
    For Christmas I wished for a cast iron and today I made my first meal with it – the chicken pasta with cream sauce from this video. And I am absolutely in love.     The chicken smoked sausage you used in your fajita meal is what I use in a gyro salad I make. I make a regular salad and add the sausage, feta cheese, onion,tomato,cucumber and then I make a tzatziki sauce that I use as my dressing. It is so good!

    I look forward to trying your ground beef stew. That looked good! I like the one pot chicken alfredo meal…I’ll have to try that one too.

    I usually cook multiples of a meal, portion, and freeze. There's usually something in the freezer that can be microwaved. Or I'll open a can of soup, add a package of shelf-stable udon noodles, some frozen vegetables, and microwave. Or tell my husband (it's just the two of us) that it's make your own sandwich evening!

    Right now I’m the opposite, I wish I could cook. We’re retired and moving to downsize and it’s taking alot longer than normal. We’re both physically limited and doing it on our own. We’ve been in our home for 20 years and have way too much stuff. I’m not able to cook right now and I’m sick of eating junk.

    Ugh, SO tired of cooking! I think it's going to be baked potato soup tonight since it's going to snow. I always forget I can make it in the slow cooker… and it's 5pm here so not tonight! Also, Tillamook cheese is the best shredded cheese ♥

    I work on the road usually. I've been off for 10 days and been cooking the whole time. I've lost a couple pounds because I cook better food than want I can get out on the road.
