    Loved this presentation! I had ordered the one that claims to be USDA approved but discovered it wasn’t it was just the company claiming but after seeing your test on the instapot canner this is what I am going with. I have an electric stove and I don’t feel those are safe enough to maintain the heat that is needed. Thanks for the testing you did!

    Excellent video! Loved your analysis. I’m curious about a couple of things…
    1) If a person lives at sea level but ‘fools’ the Instant Pot Max, setting it to a higher elevation, will it affect (increase) the maximum temperature and reach 250F?
    2) Does line voltage affect the maximum temperature your pot will achieve? In other words, if a person uses their Instant Pot Max unit with a line voltage of 110VAC, then tries it at another location with say 125VAC, does it reach the same maximum temperature?

    Lifesaving lecture you offered us 🙏 Priceless. A huge thank you. As you very well pointed out, the public is not going to settle with a simple “just do it this way as I say”. And this knowledge is necessary to avoid mistakes due to any deviation in your standard process. After reading current information from the official sources, I had still many questions and felt unsure about how to do this.
    I was improvising with canning beans (I know… I had no idea 😱) and only afterwards I sought for information. I am soooo glad I found you 🙂
    I wonder do I just trash it to avoid any exposure or can I pressure cook the whole closed jar in a normal IP (I don’t have the Max) at the time of consumption?

    Good evening. I just found you today as have a fairly new instant pot and want to learn canning. I have now binged on several of your videos via my husband’s YouTube account. I must say I truly appreciate your due diligence in researching the FDA standards. Now my wish list also has an Instant pot Max in it. Plus I watched your meals in bags video… may I say ingenious.     Thanks for the superb information Rose. I am impressed with your knowledge (also envious!). Unfortunately the Instant Pot Max is not suitable for use in the UK as it requires a different power supply than we have here. You run on 130v whereas we run on 204v. Such a missed marketing opportunity by this manufacturer. They would sell loads of these in the UK. Are you aware of any other electric canner that reaches the required temperature that I might follow up? Thanks, Ken.

    This was an excellent testing of Instant Pot Max. You are a great professor! Not many people would have the propensity to do all the research that you have done on this topic. I don't have a max at this time, but I may consider getting one as we are getting older and lifting those All Americans are getting pretty heavy. We have three and no interested family members to give them to. I would sell them, but people will not was to pay what they are worth. I am saving this video so I can refer to it again when I get the Max.

    You are absolutely amazing!!! I am learning so much from you. I'm new to perserving food and you explain things so clearly and scientificially, I just love it. I bought a water bath canner yesterday and was going to get a pressure canner next week. After viewing this video, I ended up purchasing the instant pot max and will be returning the water bath canner lol. It seems like I can do both processes in the one pot. Excellent! Thanks so much for all of your hard work and sharing it with us. New subbie for sure! Bonus: I never seen a roadrunner, that was cool!

    Thank you for your careful recommendation. I've seen many pressure canning videos where the recipe and/or method is in direct violation of the USDA National Center for Home Food Preservation. Botulism is not a joke, so my choice is to follow the recommendations.

    In 2015, they tested the Instant Pot – so their tests are not on the current model. According to the USDA NCHFP, because the Instant Pot is small, the heat up times and the cool down times are shorter. I didn't know that these times are required to make the food safe. They mentioned adding 10 minutes to the processing time, but apparently that didn't work as well. I'm leaving the link below.

    So, for the time being, my choice is to NOT use the Instant Pot to pressure can food. As you say, everyone needs to do their own research and make their own choices.
