Great looking dinners! The zucchini cakes look delicious, but wringing out vegetables is one of my least favorite tasks… maybe I'll try stir frying the grated zucchini over low heat to get rid some of its liquid. Weirdly we don't have ground chicken here in the UK (not the major supermarkets I shop in anyway). It baffles me because chicken is a very popular meat here, and we have ground beef, pork, lamb, turkey, just not chicken.

Also, I was drooling over the Moussaka. It is kind of a lot of ingredients, but I can deal with that. I don't think eggplant is too bad with the carbs because it also has fiber (I only do net carbs for whole foods so for me it would be fine).
I like your leftover dishes. You are more creative than I am about using them up!
