I used to pok holes in my potatoes because that's how my family did it for generations. Now, I don't poke holes; I just bake them until they're done.

Just recently had this from a guy in my town (Southeast Texas) that has a bbq restaurant and he puts bbq oxtails on potatoes they are falling off the bone and amazing, glad to see it catching on!
The only thing I would say about the brown sugar method is you need to be careful not to let the caramel burn. If it burns, the oxtail will have a bitter taste. I personally don't like my oxtail dark like that.

Doesn't look amazing to me! Oxtails are the star of the show and don't need to be slathered in cheese. Simple is better when it comes to enjoying this delicious and tender meat. The best oxtails either Dominican, or Jamaican Style, or Southern Style are always served with white or yellow rice and never cheese.
