Instant Pot Polynesian Pineapple Chicken

I was recently sitting in my living room taking in (singing) some South Pacific.  It’s really only fitting because not only do I love musicals (are you really that surprised?) but I also LOVE anything tropical/South Pacific/Polynesian/Hawaiian.  I may also have a Tiki Bar obsession.
 
Due to the big success of my Pineapple Upside Down Cake and my love of pineapples and all things tropical, I was inspired to create a chicken dish that brought out the ultimate flavor in a sweet (but not OVERLY sweet) Polynesian-inspired sauce adorned with pineapple and peppers.  The sauce in itself can be a religion.
 
Now we all know the Instant Pot cooks chicken like nothing else can; SO moist, tender and fall apart and that’s exactly what you’ll get in this dish – especially since we’re using thighs.  And chicken dishes don’t get any easier than this one, folks.  Not only will you go pineapples over it, whoever shares it with you (kids included) will clear their plates in no time.
 
So prepare to make something SO easy and SO outrageous, you’ll end up getting lei’d in return!

    Yummy delish. Why not use the juice from the pineapple to put in with your cornstarch? How about adding chopped onion and green pepper too in making your sauce? Love the way you demonstrate how to utilize the features of the instapot in making a dish. jmo

    I was interested until I saw the processed (chemical) dressing and canned pineapples. There must be a way to make the sauce with natural ingredients I would definitely use fresh pineapples.

    How about if I add sesame seeds to this recipe ? I didn't have thighs but did have bone-less chicken breasts (two small)…Also I added the liquid (a small amount) from the can to make the thickening…..served with rice….Recipe is a bit sweet….Joyce from Sunny Florida.

    Added a purple onion, cooked the chicken for 13 minutes and it was perfect. This was a very messy spewing release though, be ready! (I have found that I need to add minutes to many recipes. Is this due to my pot? Elevation where I live?) This is a delicious dish!!!!

    Jeffrey—Made this tonight and WOW! Very easy and pretty damn tasty to boot. I used breasts cuz no thighs at the store…lol and I added some green pepper and onions as well. Next time I will add some sliced carrot too. Cooking time was spot on with my 3qt mini.

    Made this today and we loved it. The only change I made was trimming a little of the fat away and lightly browning it before pressure cooking. Will definitely do it again.

    I've had this before.but they dint make it in a pressure cooker. Although they do have one of the stove top ones. It's never used though lol . They wouldn't tell me how they made there dang sauce .I'll bet that's it .it was yummy to .looks good Jeff I'll have to try it .ty

    I made this tonight…and it was so tasty. I had chicken breast out and used that. I totally think thighs would be spot on.
    Cooked a little less and it came out great. I love your recipes and share you page constantly. Thanks for posting another fabulous recipe. Hugs!

    I'm new to Instant Pot cooking. Tried this tonight for supper – super easy and delicious. I added some chopped onion, minced ginger and used the pineapple juice to thicken the sauce. Will definitely be making this recipe again.

    We have a fantastic Chinese restaurant here in Fort Lauderdale called Lotus. They make the most delicious pineapple chicken. It is always on our list of take out from there. Tonight I made this Instant Pot recipe over brown rice. I must say without a doubt it seriously rivals Lotus. I debone and deskin the thighs myself saving about half the cost of the thighs. I used Wishbone Sweet & Spicy French dressing and instead of 3 T. of water for the slurry I used the pineapple juice from the can. I did not want to waste the rest of the juice so I poured what was left in the can in the pot. It did not affect the thickness of the sauce at all. I also used the canned Publix tidbits which are equal to the Dole chunks cut in half, so I had twice as many pieces of pineapple (not crushed but tidbits). Now I don't have to pay for pineapple chicken take out from Lotus. Thank you Jeffrey! Tom
