Chef John, some of your techniques blow my mind! I love the shortcuts I find for some of my favorite things, like Mac and Cheese! I just made the best one ever, my ingredients, my way. Loved it! 😋

I think a lot of your recipes and I’m grateful to you, I don’t care for this one. It doesn’t really take much longer to make it the other way because you can cook your ruin your sauce while the pasta is boiling you don’t have to bake it and I think it’s much more rich and cheesy that way. I add white pepper, salt and dry mustard to the sauce plus fine grated real Parmesan or Pecorino Romano to the bread crumbs for extra crunch and yumnosity.

My food wish is a shrimp au gratin over rice. (Shivers). I am excited to try this method. My family is big on mac n cheese. We make it the hard way, happily, with a cheese and breadcrumb crust. Most importantly though is the green onions. Try it. Enjoy!

Great starter recipe for 'better than the box' Mac and Cheese! Too much salt for me as written, I'd half it. I love a good runny Mac but 8 oz of noodle was a little too runny. I'd recommend 10-12 oz. Other than that my only recommendation would be (if you have an electric cooktop like me) is turn the heat off before stirring in your cheese. Once the cheese is fully incorporated, then put the lid on and move it off the stove completely for the 3 mins so it doesn't separate as some have noted. My favorite combo with Mac is broccoli and jalapeno! Enjoy!
