I totally forgot to mention this in the video… someone is eventually going to ask why I put tomatoes in this when the burger that inspired it doesn't have tomato. My answer is simple, the sauce has tomato in it so there is technically tomato flavor. I needed something to break up the flat color scheme (hence red onion), so they seemed like fair game. Remember, eating isn't just about taste, it has to be visually appealing. That is why there is a whole industry built around making food look pretty.

Substitute paprika instead of ketchup, and add a tsp of white vinegar. Saves a couple of carbs, and taste a little more like the special sauce you're immitating.
Looks very good. I do tacos in a bowl pretty close to that. I'll definitely give the sauce a try once I find some good sugar free ketchup!
