Hi Nami! I have a question regarding soy sauce. Which one are you using usually, usukuchi or regular one? I personally prefer usukuchi, but it doesn‘t have the nice dark color as regular one. Is there a „rule“ which soy sauce you should use for which dish?! What is your favourite brand? Here in Germany the sell mainly kikkomam and I don‘t like their regular dark soy sauce very much. And when you read „soy sauce“ without any further explanation in a japanese recipe, what do I use then, usukuchi or regular, or is that a matter of taste? Thank you for your gorgeous videos!!! Hello. I am making this today but I have some questions. The only bamboo shoots I could find are boiled bamboo shoots. Can I still use it for this nishime? Also, what is a good substitution for snow peas, I could not find at both Asian markets near me and nothing at the American market. Thank you. Happy New Year!!

This looks fabulous Nami! Unfortunately, most of the vegetables aren't available in my area: burdock/gobo, konnyaku, bamboo shoot, and satoimo are just not available in the local Asian markets here – it's a large university town with many international students but most of them are Chinese!

I make Nishime for New Year’s. I add Konbu, and daikon in it also. I always tell myself I will only make a small amount but by the time I add everything in, it turns out I need the biggest pot I have! 😂 love your recipes! Happy Holidays!

How delicious, thank you for this recipe, when my father was alive every new year we would have a soup called Ozoni, he would tell me each ingredient had a meaning and that we were suppose to have a good new year. Since he has been gone I have a hard time finding the ingredients to make it, we don't have a Japanese grocery close to where I live.
