    It seems like you're using a temperature that's too high, because you have brown parts in it. The separation occurs below the boiling point of the butter, and there's nothing browning/oxidizing at that temperature. I usually do two packs of butter in a pan, and I'm done in 10 minutes, not 2 or 3 hours.
