I cooked mine 60 minutes, and they were overdone. I’d say 45 would be better then let sit five min, then quick release. Also add spices last.

I find that I get meatier ham hocks from a butcher shop rather than grocery store.
I think your cooking time was more than adequate. I learned after making beans that would NEVER get soft, acid (think tomatoes, lemon, etc) needs to be added after the beans are completely soft. Acid will leave the beans tough if added at the beginning of the recipe. I don’t know why cookbooks don’t point that out. It took a little internet searching to figure out why my beans stayed nearly crunchy.

Thank you, I will cook longer when I get my Ultra instant pot and use the ham bones I am saving in the freezer. After I will do like you did because I love ham hocks.
ps. you might know this already, but i've been told when doing beans, add a tablespoon or two of some type of oil, to keep them from foaming, and maybe messing up the little stopper thing at the time. Hope i'm not irritating you with these hints. Just some things I've learned.
FYI…. Beans usually take 50 min to an hour, to be really tender, but not mushy. I dont' understand why people use carrots and onions, and other stuff in bean soup???? (to each their own, i guess). but i like the beans, and add a ham steak to it, and after it's all done, you'll be able to shred the ham, and it will be sooooo good. Yours did look good too….just saying. but, another great video.

Looks good! I have made this soup before and added kielbasa sausage, a can of stewed tomatoes & diced potatoes. I like your idea of carrots! Will give that a try. I have a bag of the beans in the pantry & carrots we bought for our Boston Terrier's snacks. He is no longer with us, so I guess we should eat the carrots.
