I still can’t wait to meet Dodger! Also, what rice do you use? I found this amazing rice in Taiwan but won’t be able to find it here. It is a short grain rice that releases just enough starch. It’s flavorful but the most distinct characteristic is that the grains are almost pearl like when cooked. It is more expensive than most other rice I’ve ever bought.

I see 3 different types of mushrooms sold as "shitake." There's this one, which looks like a larger cremini, there's a version like this which has a crinkled top like a badly cracked cheesecake, and there's a third type that's thinner in stem and cap. What is the difference and your preference?
