    Serve the pickled onions with the croquettes, and use any leftover spaghetti, parmigiana cheese and little cream cheese to make Alfredo. Just add a protein to it or on side, with bread and salad. Combine all of any leftover dried beans to make like a 15 bean soup( can even add in leftover lentils, navy, kidney, butter beans… just keep adding them dry to make up a pound, then place in slow cooker and add: ham bone or chopped ham, squeeze of lemon, chopped onion, garlic, chicken bouillon, bay leaf, garlic salt, onion powder, can of tomatoes, chopped celery. Cook on low until beans are tender and ham has fallen off of bone. I am sure there is a recipe on you tube for it. Make a big pan of cornbread to go with it. Serves plenty and using leftovers that are turned into a good meal.

    You can also make a wonderful cream of carrot soup from your broth, onion, carrots, ginger and little milk. Serve with your sourdough bread and a salad.

    Since you had such an abundance of potatoes, why not use one can of tuna ( drained very well), left over mashed potatoes ( let sit in fridge over night…you want very stiff ones). Mix Potatoes, tuna, S & P, chopped green onions( green part), 1 raw egg. Mix well, can add in seasoned bread crumbs if mixture is too wet. You want the mixture to be able to form into patties, that hold together. Dust each patty in flour and pan fry in small amount of oil. Serve with hot sauce, ketchup or trader sauce. Other ingredients you could add into this mixture for patties is, grated cheese( not any more than 1/4 cup), Worcestershire sauce( about 1-2 tsp). This mixture only needs one small can of tuna. These are very tasty, not fishy and will make up around 6-8, 3-oz patties. Add coleslaw, salad, corn on the cob or broccoli with cheese sauce or black eyed peas and Mac and cheese or scalloped potatoes. I think the family will like these. The main thing to making the patties is potatoes with as little milk and butter you put in them. The biscuits you made would be great as cheddar cheese biscuits to go along with the meal. Also, could have made a large casserole dish of scalloped potatoes instead of Mac & cheese. Make enough to have leftovers to turn into cheesy potato soup and serve with salad and leftover garlic- cheese biscuits. You can also, cook up a lot of cream potatoes, add in cheddar cheese, sour cream, green onions, cooked & crumbled bacon, butter, little milk. Mix altogether until combined. Place in a freezer- oven safe casserole dish. Place pats of butter on top of potato mixture and cover with tinfoil. Freeze until ready to eat. Take out night before and place in refrigerator. Bake at 350 degrees for around 20 minutes. Then top with grated cheddar cheese, bake until hot and cheese has melted and browned a little bit. Serve with a vegetable and a protein. If any black eyed peas left over, turn into bean patties and serve as a burger or as protein with Mac and cheese and broccoli. This way something in each meal gets to star in the next meal. Get apple sauce instead of apples if cheaper…use in an applesauce cake, in oatmeal, muffins and just as is. I make cinnamon rolls and freeze them after baked and cooled, without icing. After thawed, then add your icing. Make cabbage rolls out of Spanish rice. Buy ground pork breakfast sausage add in chopped onion, garlic, S&P, crushed tomatoes…simmer until starts to thicken. Cook some rice, add to mixture along with some peas and corn( just enough for a hint of them— for Mexican add in little bit of black beans and tiny bit of Mexican seasoning)… if not continue as is and place mixture in halved and cleaned out bell- peppers ( stuff them tightly), place a peace of bacon on top just large enough to cover rice. If making Mexican substitute bacon for cheese. Bake uncovered in oven at 350 degrees for around 40-45 minutes. Serve with vegetables and and a desert salad( doubles as dessert and as part of meal). Try the Watergate salad or pretzel-jello salad.

    We normally grow herbs but it takes a while to start them off so the plants last!!! Cheese and chive biscuits sounds awesome!!! The Chinese meal looks awesome!!! We eat a lot of curries but not yet had Indian street food!!! We love veggie shepherds pie but we’ve not thought of calling it gardeners pie!!! The Middle Eastern meal looks like some of the meals we ate in Israel!!! We often eat Middle Eastern foods!!!

    Really enjoyed the series and the awesome recipes that you made with ingredients you had. It was great that your dad joined in for one the meals. You have inspired me to start making my own bread again. I was doing that for awhile but stopped. I have never made tortillas before; however your videos have shown me that is quite doable.     I love these videos! Just taking bits and pieces of your process can really help stretch the grocery budget. I’d be interested to know how much time you spend planning and time spent prepping and cooking because I feel like that’s usually why people struggle the most with groceries, convenience foods are just too convenient!

    This is such a great series! You always amaze me with what you make, very inspiring! I wish my kids would eat veggies like yours do- they did as babies!!! I would be curious the price difference in how you make certain meals now Vs. when you are not doing this budget plan. Thanks again for your channel, really helpful!

    I know you did not ask and please ignore if this offends. I just know teens face enough issues without the discomfort of acne.

    Just wanted to share that your son with acne would benefit from heavy helpings of leafy greens and other vegetables (no dressing, smoothies recommended & add apple/pears/peaches if desired). Avoid tomatoes 🍅, add back slowly after acne clears to test tolerance. Fats – avocado & cold pressed organic coconut oil. Proteins like eggs and fish are fine. Drop breads, pasta and cheese completely. Add back slowly once acne is clear to find acne tolerance. Instead of cheese try plain full fat yogurt, raw milk recommended if possible). This has worked for many people I’ve recommended this to. My husband had the same facial acne and on his back the painful cyst type acne. His face cleared within 2 weeks and his back in 2-6 weeks. Stubborn acne may require a higher percentage of leafy green and vegetables.

    So you have a budget that allows you to spend even more money by buying local products? How is this saving money or having an extreme budget? If you have 60 bucks or whatever amount for food then that's what you have correct? Or you're saying you have extra in the budget.
