I made this the other night but I realized I didn't have chicken so I improvised and made a vegetarian (or almost, I still used chicken broth) version. Since I didn't have chicken, I obviously didn't get the fond that would've made this dish taste as flavorful as yours, but it still came out delicious.
I sautéed the veggies with all the seasonings, as well as creole (didn't have cajun seasoning either) until most of it have softened up and reduced. Then I made the sauce as instructed and it actually came out pretty good. Turns out creole seasoning is a pretty suitable substitute for cajun seasoning, but I'll definitely make sure to get all the right ingredients for the dish next time!
