Cajun people have Acadian ancestry. Acadian are the French (white) people who settled/colonized Louisiana. They identify as Cajun intentionally to distinguish themselves and their cultural heritage. Also they speak French (an interesting Acadian version of French) that would be recognized as French by French speaking people. The language Creole people speak includes some French words, but would not be recognized as the French language by French speaking people.
Creole people have African and indigenous ancestry (may or may not have French ancestry as well) and while they may speak French, also speak creole which is an amalgamation of languages derived from the mix of languages their ancestors spoke.
It’s an important distinction. The food and the people are different although they share some culinary and cultural traditions. For example Cajun v Creole gumbo…
