    I've been making this "bread" from Maria Emmerich for quite awhile, usually twice a week using 1.5 cups of liquid egg whites and 1 cup of powdered egg whites and 2 t. cream of tartar. The amount of powdered egg whites and the cream of tartar helps this bread to keep it's lift and it maintains a smooth glossy finish even after cooling. I do add other things like sweetener, a dash of salt and vanilla. I have never gotten the "ugly" look. Another tip for the sticking issue is to use parchment circles in the bottom of the pan and strips around the sides and then to spray the parchment with oil. Also, I cook mine at 300 F to keep the top from browning too fast and too dark. I keep mine in the fridge in a ziploc bag and it keeps perfectly. I hope this helps.

    That looked lovely. I tried to make the bread once and it was a huge fail. Not sure what all I did wrong but it was the dryest thing I ever tried to eat. It sucked all the moisture out of my mouth and I could hardly swallow it. Ended up pitching it, which was sad because those ingredients can be pricey. Maybe I will try it again after seeing your success on this.
