    If you don't mind some fat in this dish:
    After cooking separate the muscles and scrape off all the fat and connective tissue, (I use a dinner knife) then render all that down in a skillet. Remove all the crispy bits. Now saute the shredded carnitas in the fat in the skillet. If you like, chop the crispy bits from the rendering process and throw them back in as well. High fat and high flavor!

    I literally just got back from the store and scored a great deal on a pork roast. I'm going to make this for the hubs this week for dinner, he works 2 jobs and his hours are crazy, the Instantpot has saved me so much time and work for my husband's meals. I'll let you know how it turns out Nili!!

    You can even use one of those gravy strainer cups (looks sort of t like a teapot, but with the spout arm joining at the bottom of the cup) to separate out the fat from the broth.
    I'm thinking pan-frying might not be bad instead of the broiling, for the pulled pork. Use a bit of that pork fat to grease your pan.

    Hi Nili! Great idea using the broiler, carnitas should be a little crispy. But I would save a little of that spice rub and sprinkle some on before broiling. But that's just me. 😁

    I follow ur recipe and made my first IP dish. Delicious!! My hubby used to make Carnitas from scratch 3-4 hours. Both him and my two teenagers approved. 3 lbs was not enough for them. We added one onion and 2 bay leaves to your recipe. Thank u!!!

    I do my pork roast that size for 60 min. The difference is that I add 1/2 A Liter of Dr Pepper and the most important step is cut roast into 3 sep chunks. This allows for it to be ready in 60 min and not have to overlock. I do the same — not too much spices As I use I use for burritos, nachos, tacos. Etc. you can use diet Dr Pepper with stevia.

    Hmm, that sauce would be great. Let the fat solidify. Remove the fat & place the broth into a pan. Cook it down with a little more seasoning. Maybe a touch of hot sauce. They drizzle over the meat…LOL
