    Candy is less about inbreeding and more about controlled temperature. It's true that corn syrup, (or really, any syrup), can help stabilize your ending crystal structure, but it's not necessary. If you'd have added a little more water to the plain sugar caramel to compensate for the extra heating time, you'd have had a more consistent crystal structure, and therefore no lumps. Corn syrup does make that effort a lot easier though.

    I genuinely just don’t respect Paul Hollywood in any capacity (for no good reason, just rubs me the wrong way), so the fact that he was wrong at least twice absolutely vindicates me

    A more hydrated dough will make a larger, more irregular crumb on baking, but takes a lot more heat to get it to do it. Think you'd have had different results if it was baked on a stone

    It feels a little hypocritical to just dunk on the UK show for not knowing the specifics of Mexican cuisine, when Americans are notorious for not respecting the culture of other countries and their food. I love this format of mythical kitchen, but this episode wasn't my favorite.

    It was rough watching Mexican food week!! So spot on!! 😆 my hubby is a brit and doesn't like Mexican food! I can't even imagine my life without Mexican food. Or any South American foods. I could eat it every single day. Plus, the way he says taco…like, Tack O. 😆 đŸ€Ł I can't.
