    This is an excellent recipe! I made a variation of this with cooked spinach instead of serving it on the side with dressing. The only drawback with cooking spinach before the lentils is that you need to cook everything together a little longer to extract the excess moisture from the spinach. Other than that, it's incredibly filling and sustainable. Guess I'll see how well this staple will work with some other slow carb meals. Cheers!

    My breakfast if very similar except for the lentils. Unfortunately i cannot eat legumes as they break my red blood cells. So I usually use some roasted butternut squash next to my eggs.

    I paused this tragic video, even i believe he lives in Texas, at 1:50. clean your stove before you videotape it. are people really so stupid that they need so much instruction on something so basic? Pasteurized egg whites? You should just throw you money in the garbage and starve. how's that for slow carb. organic organic organic, but Newman's own. painfully bad video. no health benefits from raw spinach. throw money away and starve.

    Great video, but I have one question: Why don't you just stir your spinach in with your eggs and let it wilt into the egg/lentil part? Do you just prefer it fresh and not want it cooked? it would then also be fewer dishes and more kind of one pan cooking. Just wondering…
