BABY FRIENDLY OPO SQUASH SOUP
I am pronouncing opo squash wrong the whole time… and I sound so confident too😂
1 smaller opo squash
1/2 lb shrimp, roughly chopped
5 cloves minced garlic
6 cups chicken broth
1/4 cup dehydrated mushrooms/ woodier mushrooms/ black fungus – optional
1 or 2 medium sized carrots, shredded – optional
1 small opo squash
Chopped scallion
Chopped cilantro
Black pepper to taste
Oil, for cooking
1.Skin opo squash and cut tp preference. I did the chopping method but other popular cuts are chunks/ squares. If you cut it into chunks or squares, you can leave the core or discard it. If you do the chopping method, I recommend you discard the core
2.Once everything is cooked, heat up some oil and saute garlic until fragrant.
3.Then add your roughly chopped shrimp and cook until its 80% of way cooked.
4.Then add 6 cups chicken stock and 1/4 cup dehydrated mushrooms/ woodier mushrooms. Bring to boil. During this process, skim out any foam if you see it.
5.Once boiling, add shredded carrots and opo squash. Cook this until veggies are soft… about 2-4 minutes
6.Once everything is cooked, turn off heat add scallion, cilantro and black pepper
7.Enjoy

We don't have opo squash where I live.
What about yellow squash or zuchini?
Go to your local Asian market for more affordable vegetables!!

In our house we usually don't throw that seeds pod away. Just chop it up in circles and cook it with the soup When you cook it is nice and soft it doesn't feel tough or hard to eat at all.
If you can get a hand on a shredder (or anything that's used to make matchstick-sized carrots and daikons for đồ chua) then that's gonna help your opo a lot! I suck at the chặt chặt chặt method too so I always use a shredder, lol

I’m Filipino and we call it upo! My toddler loves to eat it and my father in law grows it in his garden so it’s always in our meal rotation. This is right up my kid’s alley. I was in desperate need of a new way to cook it so thank you for this recipe 💛 I’m so excited to try it
I don't have kids but I appreciate the fact that you feed your kids food with lots of variety. I know not every family can afford that, but for the ones that can I think that's super important.
If the vegetables are too large (or not super soft) for babies with no teeth.. you could always blend it with the rice to a creamier consistency..
