    I need help. My cheese keeps becoming clumpy and stringy. I boil the pasta, place it on top of room temp butter when it’s al dente, and then I mix, add spoonfuls of cheese, and pasta water. Immediately after I start mixing it starts becoming clumpy. I have no idea what I’m doing wrong.

    In my region in Italy this pasta was also known as "cheating wife's pasta", because is super fast to make, and a cheating wife has not so much time for cooking. Pro tip: add also some black pepper at the end

    If you want a better alfredo sauce, heavy whipping cream. And much, much less pasta water. You only want it to help emulsify everything. Like less than a quarter cup.
