    You make that look so easy! Look your cooking! For my entomatadas I always use Hunts tomato sauce, Colby jack cheese and flour tortillas. So yummy! My mother in law taught me this recipe.

    It's funny how potato tacos are made differently. My mom would make these for us during lent. She would fry the tortillas first then add the potato and put cheese and put them in the oven. I fry my tortillas first then add the potatoes and lettuce, tomato, and cheese and I add parmesan on the outside of the tacos. Believe me, you will love the taste of parmesan. I've never had entomatada tacos. I'll have to give that a try. I made potato tacos on Friday plus stuffed Anaheim chiles. The thing with these chilies, some will be mild and some will be spicy. It's like a surprise in each chile. My mom used to make camarones empanizado (stuffed shrimp). Not big shrimps but in powder form. Thank you for these tasty recipes. Also, I've heard people say that you can eat chicken during lent, but my past priest did say "anything that walks on the face of this earth, is meat" so no, we cannot eat chicken during lent.

    @ about 2 minutes in, please, no. Please, don't use unrecyclable plastic wrap. Use a paper grocery bag, perhaps a small one from a liquor store. Just close it up, and when used, it can then be composted. Just bury it under your flowers.

    @7:30 in, um, ANYTHING with chicken stock in it is NOT "meatless." That is what one local Mexican restaurant got told, after I found out, after a QUARTER CENTURY of eating their "vegetarian" enchilada sauce, I was informed it had chicken stock in it. They were lucky I didn't sue them.. Not kidding. CHICKEN STOCK IS NOT VEGETARIAN, let alone VEGAN. Vegan versions, including Osem consomme, and various Vegan bouillons exist.

    @28:20, I recommend Tiger Seasoning, which is MSG, salt, garlic powder, and white pepper.
