Thank you! I ended up doing the stove top version but adding a fresh diced Roma, and 4 Oz tomato sauce (2 Oz pato yellow can, and 2 Oz hunts) gave it the perfect flavor. First time ever making mexican rice.

My mom is from Jalisco and she taught me to fry my tomato or tomato sauce with the rice, chuck of onion and whole garlic. She doesn’t dice the onion nor mince the garlic but she quarters the onion and adds one piece with a whole garlic while frying then once the rice was done she removes the onion and garlic. We were raised with killing our own chickens, so she always used fresh chicken broth. Sometimes she adds frozen/defrosted carrots and peas, I suppose to give us veggies. Perfect delish rice every time. Thanks ladies!

I love your channel! There are so many videos that just don't know! I grew up in Rosarito, Baja California and if it's not right, I'd rather not eat it! I live in San Antonio, Texas now and the Mexican food here is slightly different than what I'm used to! Thank You!

    Hi Cloud & Steph!
How much garlic (the way Cloud says it), do you use in your recipe? I used 2 large cloves, I’ve got to wait to find out how it works. Muchas gracious, excellent video! Second time to try this recipe, first time was really soupy. So I’m cheating down on the water! Thanks again for the info, excellent camera work, Cloud!

I'm so new to the instant pot. I loved the recipe, but the pin didn't come up when I cooked it on low pressure for 12mins pressing the rice button 😂😂 my pot was burnt at the bottom, but the rice was 🔥 🔥 not sure what I was doing wrong

Finally someone who cooks rice like me (and my mom)! Thank you for the Instant Pot recipes. I just bought mine, made the carnitas recipe and feel like my life is changed. 🙂
