You lost me for a moment with cheddar cheese and no legit mozzarella, but you redeemed yourself with being adventurous and including spinach as a nutrient-dense substitute for Italian parsley and sour cream for added flavor. While I wouldn’t make my lasagna identical to this, I think I will try a couple of your variations for my next lasagna dish. Also I’m certainly not opposed to the way you went about this; if it were served to me exactly as you made it, I’m confident I would eat it and thoroughly enjoy. Good stuff. 👍🏼

That cheese mix is easier to stir it if you put two eggs in it.
Adding brown sugar is better.
