    Sweet Christmas Courtney, for someone that was having a ‘I don’t want to do much in the kitchen’ day. Your food was amazing 🙌🏻🙌🏻.
    My off days look nothing like that, I can assure you. I pull out some frozen vegetables and a couple of frozen sweet potatoes and call that a meal. Sometimes I complain to myself, that surely this meal isn’t the best I can do!!!!!!
    But I just tell myself to shush up and eat 🤣🤣

    I usually fix quick oats with hot water,apples & cinnamon for breakfast. I skip lunch but for dinner I eat quasiditas with black beans or refried beans with lettuce,onions,&hot sauce. It really works for me when I don't feel like cooking. Snacks are fresh fruit. Hope this helps you, God bless you from grandma Katie in Oregon

    Hi Courtney 🤗 I have those days too when I don't want to cook much. For breakfast on those days I usually have some quick cooking oats that I can just add boiling water to from the kettle and some banana slices, a dash of cinnamon and a spoon of ground flax and I'm good to go. Lunch I can have a salad and some beans and rice that I have each week in the fridge so they just need to be reheated and for dinner I will have some sort of vegetables that are either precooked or frozen and heat those up and serve with a couple of Yukon gold potatoes that I have microwaved until done. Very lazy and boring meals but quick and good to eat. Some jarred salsa helps these taste really good too.

    Oil free ? Oil free will shorten your life span. We cant live without oil. We need oil, especially good oils. Grassfed butter, olive oil, avacado oil.

    On those days when I can't face cooking or heating up oatmeal again, I pull out boxes of fairly healthy boxed cereal for breakfast. I add a tablespoon of flaxseed to each bowl, along with a handful of walnuts and raisins, with some sliced banana on top. My family thinks it's special because we don't eat boxed cereals often! 🙂

    Another fantastic video of what Courtney eats when she decides to have a lazy non cooking day. I was surprised to see this video on a Saturday (even though I do appreciate it) because I thought Sunday's & Thursday's were upload days. The food was yummy 😋 & awesome as always.
