I've been canning for 50 years. I keep saying I'll get me a YouTube channel and do some demonstrations. Back in the 1970s Ball used to have "Ball University" which was canning classes lasting 2 days. I then became a master food preserver by the local Extension Service. Now is certainly a good time for people to learn to home can foods.
chicken was on sale this week, I got 60 pounds of breasts for 99Β’ a pound, canned the meat and then cooked the skin and bones, canned the broth then skimmed off the fat and froze it to make pie crusts. I let nothing go to waste.

Thank you for sharing this recipe! My mom and dad are going to love making your plum jelly! Last year, my mom made pear preserves. My parents are searching for an authentic muscadine wine recipe. They grew up in Alabama with PLENTY fruit trees, berries and melons on their properties. To this day, they speak of how much sweeter and flavorful fruit was back then. Of the plum varieties, they say they especially enjoyed the yellow ones with salt sprinkled on them. Tried it and found it pretty tasty!

My favorite was my grandmother's pear preserve with hot biscuits.
I tried to get my mom to teach me how to make jam and jellies she told to buy it she had to help her mother make jams jellies preserves pickles chow chow peaches apple butter sauerkraut too corn green beans and she told me that was so much work she grew up doing the Great Depression but her mom and dad had a big farm she pickled watermelon Rhine pickles squash okra and tomatoes. You have the best recipes.love ya

My grandmother made blackberry , mayhaw & plum jelly also fig , peach & pear preserves….we would eat jelly & preserves with her homemade biscuit during winter months ! "Other relatives always enjoyed coming to visit to take some home" !

Have you ever heard of Rex Jelly? I remember when I was a little girl, my grandmother used to buy to make a jelly cake. I remember the flavor was raspberry. I don't know when they discontinued or took it off the market, I just know that it's not sold anymore. Your cooking videos take me back to when I was growing up on my grandparent's farm in Arkansas.
Just sayin' bud, but you need to make sure your techniques a tricks show on camera when you are showing them (maybe a camera with a flippy screen so you can use ot as a monitor). My mom made Mustang Grape jelly back in the 50s and 60s. Very high acidity took a LOT of sugar.

Hey nice video ..do you use any citric acid to brighten the flavor of you jams… I made watermelon and the rind to make jam yesterday used lemon juice at the end but considering citric acid the next go around
My Zoom made all kinds of Jelly for us six kids and all our visiting family. We had 8 bedroom and 5 bathrooms so everybody stayed at our house when they visited CT. The Kitchen. Dining Room and Den were always full. My daughter is 56 so I have been making it myself for at least that long. πππ Best regards.
