    When you said hot turkey sandwiches I got excited, but yours is different than ours! here in the mid Atlantic region a hot turkey sandwich is plain turkey between 2 pieces of white bread and the entire sandwich then smothered in turkey gravy. It's the greatest thing ever! Served with a side of mashed potatoes of course . Every diner serves that here and also a roast beef version. Yours is similar though the ingredients are just in a different order!

    You've got the right idea! I always put my turkey or chicken carcass (along with any skin and the tips from the wings), add some veggie scraps into my crock pot (like the ends and skin from onions, carrots, any part of celery that I didnt use or cut off (I keep these in a baggy in my freezer), cover with water and spices and cook all night up to 24 hours on low. The long it cooks the better. So, I think you could also do the noodle one in the crockpot. After you strain the poultry juice and add it back to the crockpot, add in the left over turkey and raw noodles and cook for about 30 minutes on high. I would probably add a can of cream of chicken soup for creaminess and YUM! I love when you can make 3 – 4 meals out of one protein! Very frugal!
