    Recent obsession: enchilada casserole, aka lazy enchiladas—would work with your carb counter tortillas. Layer of enchilada sauce (homemade is ridiculous easy, just figured that one out 😂), layer of tortillas, cheese, alllllll the veggies—spinach, corn, onions, beans, whatever, and then a rice layer—rice (cauli rice would work too) mixed with cream cheese and green chiles (I combine in the mixer)—if I am adding chicken this is where I will do it—shred it in the mixer then add the cream cheese chilis and rice. Repeat and then top with more sauce and cheese. Put it in the oven at like 350 for 40ish minutes or until the cheese is all melty and yummy looking
