I make something very similar I cook the ham bone to make a stock then add everything you just did, (no chicken), extra ham, I like the bean mix, even better the next day. I do not can it though, but that looks good. You are just the canning queen, that canner is a work horse.
I'm curious if the lemon juice would be something I would want to leave out. I'm not fond of strong lemon flavor specially in a soup. what are your thoughts?

now I know what to do with the bags of 15 bean mix I found on crazy clearance for $.25 recently! I had no idea what I was going to do with them, but I wasn't going to pass up 1 lb of dried beans for a quarter!
Would this be a good use of a pork shoulder? And would you raw pack that?

I can cut-up ham in broth all the time. I didnāt know you werenāt āsupposedā to can it. Guess I canāt do that anymoreā¦. NOT! Iāll keep being a rebel canner. š¤Ŗ
