I make something very similar I cook the ham bone to make a stock then add everything you just did, (no chicken), extra ham, I like the bean mix, even better the next day. I do not can it though, but that looks good. You are just the canning queen, that canner is a work horse.

I'm curious if the lemon juice would be something I would want to leave out. I'm not fond of strong lemon flavor specially in a soup. what are your thoughts?

I've never heard of French market soup before but this looks like something that we would absolutely like at our house I can see all kinds of different meats you could add in there and it be a very good.
Just printed my copy! With anything from NOLA I would probably add shrimp when I open it and put it on the stove
