A super yummy, easy dish that uses eggplant is Caponata! It's kind of an Italian take on Ratatouille. When I make it I use: eggplant, zucchini, onion, bell pepper, olives, capers, tomato sauce, s&p, and any other spices to taste. You basically just cook everything down in a big pot/pan and can eat it plain, with pasta, or anything else you might want! The eggplant is kind of the star of the show and really gives it a delicious, distinct flavor!!

Few Indian ways to cook eggplant- 1 Baingan bhartha (it's basically Fire roasted eggplant mashed with spices, onions, tomatoes and peas) 2 Badnekai yennegai (small stuff egplant) you get these small ones in any Indian store. You can look up YouTube for diff variations of these recipes and I am 💯 sure you will love them. ❤️ lots of love, varsha

I, was Born in Portland. So, I have Family in Oregon, Washington & California. So, I have always Moved between the 3 States. Before, finally Settling down in N.E. Oklahoma ( Tulsa Area sort of) back in 2002. I, think you'll enjoy it. It doesn't get a lot of Snow, if any but it does Rain a lot. Blessings & Love to you ALL, Piper & Singer a.k.a My Kitty

If you use a grater on the tofu you get a more even shred and it is easier to season all of it. Also just easier to fit in Taco's.
