A super yummy, easy dish that uses eggplant is Caponata! It's kind of an Italian take on Ratatouille. When I make it I use: eggplant, zucchini, onion, bell pepper, olives, capers, tomato sauce, s&p, and any other spices to taste. You basically just cook everything down in a big pot/pan and can eat it plain, with pasta, or anything else you might want! The eggplant is kind of the star of the show and really gives it a delicious, distinct flavor!!

I have to make that eggplant dish! It looked so delicious and I love that you didn't cook it in oil (I have been cutting down on how much oil I use in my cooking).
    I can't wait for more recipes/videos!

Sarah, You'll probably love Washington. Especially, if you're close to the Area Jasmine & Chris, are in. I, lived there for about 6 Months before, Moving back to SoCal in 1994. I, was Born in Portland. So, I have Family in Oregon, Washington & California. So, I have always Moved between the 3 States. Before, finally Settling down in N.E. Oklahoma ( Tulsa Area sort of) back in 2002. I, think you'll enjoy it. It doesn't get a lot of Snow, if any but it does Rain a lot. Blessings & Love to you ALL, Piper & Singer a.k.a My Kitty
