    I make a cauliflower soup from Chocolate Covered Katie that makes an excellent oil and nut free white sauce for scalloped potatoes or when ever a cream sauce is needed. This lasagna looks yummy.

    This looks absolutely wonderful. I'm didn't grow up with lasagna, but am crazy for all that ooey, gooey stuff, and the finely chopped vegis. It all will hit the spot with me. Thanks for showing the lesser tech way of chopping. I have had something similar, but not sure if I still have it, or can find it. Might have to invest the 18 bucks to have that great gismo. This is wonderful.

    Natalie, I’ve lost a few stone on a normal diet with just calorie counting and roughly keeping track of my macros but have found when I’m eating vegetables/potatoes/oats etc I am a lot more satiated which is making me think about going WFPB. Is having lots of Protein the be all and end all or is it just not that important, thanks? xxx

    I can't believe how simple that white sauce looks. It's been something I've so far been making from jars and I really wanted a recipe that didn't involve a ton of fatty cashew nuts. Cauliflower will be perfect. I can't wait to try this.

    Looks absolutely delicious, I love how you prepared all the vegetables and sauce! Fun thing, I used to love cod in parsley sauce, but I’m happy to make cauliflower and cannellini beans in place of the cod, all plant based, even though I’m not vegan. It is liberating when you let go and veganise the old favourites.
