Joan, I made this tonight and even my meat loving husband and son loved it! Instead of potato chunks I used riced cauliflower and skipped the half & half and used water. Delicious! Thanks for the recipe!

Hi Joan! Do you think this would freeze well, with the cream? I have a feeling when I make this I am going to have a lot of leftovers if I don't cut it way back…unless I can talk my kids into eating it. Even as adults they are super picky.
