    Hi Jess! I don't even have my meal plan put together for the month yet. Ugh Its almost half over. I have to get my act in gear I guess. Seeing you and another you tuber making meatballs makes me want a meatball sub so some time this week that is what we are having. I wonder how they would stand up in a lettuce wrap. I will probably just throw them on top of a salad.I am home all day so I don't have to do a ton of meal prep anyway. I did make yogurt the other day so I have my breakfasts taken care of. lunches are either turkey sandwiches/left overs or I do my big meal around 4 and eat something small around 6. So are you not weighing in until the month is up?

    Looks like another tasty week! Those potatoes…yes! My Irish belly is envious! I have not meal prepped in many weeks, but I do still meal plan. Tonight (Sun) we're having Beef Enchilada Bowls, (Mon) Broccoli/Bacon/Egg bowls, (Tue) Egg Roll in a bowl, (Wed) Smoked Sausage with cheddar sauce & riced cauliflower, (Thur) Crockpot pork roast with radishes, (Fri) leftovers.
