    Hi Kristi. Thank you for the soup recipe. I just made a batch and put it in the crockpot. I had to improvise though, I added a can of diced tomatoes and a can of green chilies for the Rotel, and a large can of chicken in place of the rotisserie chicken. I also only had Siete brand taco seasoning on hand, so I added half of an envelope of that. I hope it turns out as well as yours! Update: The soup is great! Thanks again so much! This is going into the rotation!

    Love your channel. Its great to get a diabetic perspective of the keto diet. I am a type 2 diagnosed around 4 years ago. Its been hard to navigate this condition. This past September 2022 I decided to go keto. Since that time, I have lost 45# and greatly improved my sugar levels to almost pre-diabetic. I just went to the doctor yesterday and she was extremely happy with my improved health. My goal is to lose another 40-60#s and to reduce my need for long-acting insulin. I now know keto will be a perm lifestyle change for me. Thank you for your channel.

    Hope you had a Happy Holiday! I was actually just up there (just drove home yesterday), but Hope and I had just gotten over COVID, so we were only seeing family to be safe. The weather was sooo cold! But the little bits of snow we had were pretty (though that one night with the high winds was a bit scary)!

    P.S. Sorry I've been a bit MIA lately. Had a surgery for my abdominal hernia back in mid-October and while recovering from that I had a uterine cancer scare (they found a mass, but thankfully after a ton of tests, it ended up being benign) and then COVID, so things have been eventful! Hopefully things are better with you guys!
